This Apple Pie Baked Oatmeal has become one of my favorite comfort recipes. It is perfect for chilly fall mornings. It also works well as a warm dessert. I add a little butter and a sprinkle of brown sugar to make the top golden and slightly caramelized. And if you’re serving it after dinner? A scoop of vanilla ice cream takes it to another level.

It’s simple, wholesome, and tastes like apple pie — but without the all the fuss of a crust.
Ingredients:
2 cups rolled oats
1 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
¼ tsp salt
1¾ cups almond milk
2 eggs
⅓ cup pure maple syrup
2 tsp vanilla extract
2 medium apples
diced ½ cup chopped pecans (optional)
2 tbsp butter (optional, I add it on top before baking)
1 tbsp brown sugar (same as butter-for topping)
Instructions:
Preheat your oven to 375°F and grease an 8×8 casserole dish.
In a large bowl, mix together oats, baking powder, cinnamon, nutmeg, and salt.
In a separate bowl, whisk almond milk, eggs, maple syrup, and vanilla.
Combine wet and dry ingredients until fully mixed, then fold in apples and pecans. Pour into your baking dish, pressing down lightly.
Brush with melted butter and sprinkle brown sugar on top.
Bake uncovered for 40–45 minutes, until golden brown and the edges are crisp.
Let cool slightly — then serve warm for breakfast or with a scoop of vanilla ice cream for dessert.
Store leftovers covered in the fridge for up to four days.
